With Longmont Restaurant Week starting this Friday, April 20th, the Longmont Observer will be publishing previews of the $18.71 menu.

James Ross, co-owner and co-founder of Rosalee's Pizzeria, invited the Longmont Observer to preview the menu as well as answer a few questions.

Why did you choose the items on the menu for Longmont Restaurant Week?

The Margherita Pie is one of our most popular pies and its all about simplicity: dough, sauce, cheese, freshness of ingredients. For the salami & basil, we slice the salami in house and the basil on that is not cooked in like the margherita, but its cut with kitchen shears and put on after the pie comes out of the oven. So its a different type of aroma and flavor.
