Pistachio Cafe Bakery celebrated their ribbon cutting on Tuesday, February 12, 2019.

Chris McGilvray, Vice Chair of LACC Board of Directors, presented the business owners Sandra and Perla Ruiz with a plaque to commemorate the event. McGilvray welcomed "a true family business" to the community on behalf of over 760 Chamber members.

The sisters live in Longmont and they have family in the area and grew up in the family restaurant business in Alaska.

Perla said, "We tried to get away from the restaurant business, but it didn’t work. We both said we will never do this, we will never open a restaurant. I married a chef. I just couldn’t get away from it. We love this place and we’ve seen it grow." Perla's husband works at the cafe and bakery.

She continued by thanking the community and all who attended the ceremony.

Sandra stated that they opened up about five months ago without advertisement to see how it went. "We just thought the Chamber would be a great way to start it (Pistachio)," said Sandra.

Pistachio Cafe & Bakery is located at 2333 N Main St, Suite A, Longmont, Colorado.
