EAT Taco|taco Opens in Prospect; Now Also Serving Lunch

EAT Taco|taco, Longmont's newest taco shop located in Prospect, opened its doors on March 21, 2018, and starting today, April 9, 2018, it will also begin serving lunch. It is located at 721 Confidence Dr.

EAT Taco|taco, Longmont's newest taco shop located in Prospect, opened its doors on March 21, 2018, and starting today, April 9, 2018, it will also begin serving lunch.

It is located at 721 Confidence Dr., Unit 1, Longmont, CO 80504, catty-corner from the park.

Prices range from $4-$8 for tacos, $2-$10 for small plates, and $7-$13 for margaritas.

Here's a look at what the Longmont Observer tried.

We started off with a Pineapple Jalapeno & Cucumber margarita, made with Tanteo jalapeno, muddled cucumber, fresh lime juice, and organic agave nectar.

Pineapple Jalapeno & Cucumber margarita - $10

Up next came four small plates: street corn, jicama salad, tuna tostada, and ribs.

Street Corn (dried chile, cotija, lime) - $5

Jicama Salad (roasted baby carrot, cucumber, avocado, radish, pickled red onion, feta, pepita, coriander sweet corn vinaigrette) - $8

Tuna Tostada (pickled green tomato, saffron aioli, radish, chives, lemon oil) - $8

Ribs (St. Louis pork ribs, tamarind chile bbq sauce, fresno citrus jam, garlic chips) - $10

Two tacos, the Gringa, and the Shrimp & Chorizo, came up next.

Gringa Taco (crispy cheese, braised short ribs, smoked habanero salsa, nopales) - $6. Vegetarian option also available for $4.

Chorizo & Shrimp Taco (citrus slaw, avocado, ancho crema, queso fresco, cilantro gremolata) - $6

And before dessert arrived, we were treated to another margarita, this time the Coin Catelope margarita.

Cantelope Coin Margarita (Olmeca Altos Plata, Canteloupe agua fresca) - $10

Churros with dulce de leche & coffee syrup - $5

EAT Taco|taco are currently open from 11 a.m.-9 p.m. Mondays through Thursdays and 11 a.m.-10 p.m. Fridays and Saturdays. They are closed on Sundays.
